"The grapes grow in vineyards, which are located further down at an altitude from 630 m a.s.l. to 700 m a.s.l. and are consequently more protected. The airstreams on the hillside create a favorable climate for this fine variety. In the cellar we allow the grapes to ferment in stainless steel barrels, then we manually press the grapes peels and in order to sit on grape pomace for some weeks. We store the young wine in oak barrels and in big acacia barrels for 12 months. The wineis a fruity, juicy and classic Pinot. The aromas are cherry, blackberry and blackcurrant. On the palate is elegant with delicate aftertaste of tannin. Pairs well with lamb meat, vegetable dishes, grilled fish. It’s particularly good after five to six years bottling." Castel Juval
