"Alessandros Brunello normale, dvs. den af hans to Brunello'er der kommer ud i hver eneste årgang, er et af de mest race-rene udtryk af ægte Brunello di Montalcino. Det er en klassisk, elegant top-Brunello fremstillet på 100% Sangiovese Grosso fra Il Marronetos mark på nordøst-siden af Montalcino, en mark beliggende i ca. 350-400 meters højde med en sandholdig, mineralsk og havfossil-præget jordbund. Vinifikation finder sted i ståltank, helt uden temperaturregulering. Straks efter druernes ankomst i gæringstankene, begynder Alessandro Mori at udføre kontinuerlig pump over, som han fortsætter i to dage. Dette udløser en kickstart af den spontane gæring, og i løbet af blot 5-6 timer har mosten opnået en gæringstemperatur på ca. 33-34º C. Denne hurtige, og forholdsvis eksplosive, gæring varer blot ca. 12 dage, hvorefter den alkoholiske gæring er tilendebragt. Herefter presses cap'en hårdt ned for at udtrække syre i ren form. Skindet skilles dernæst fra den færdigfermenterede vin, hvorefter al vinen fordeles på store gamle fade. På disse fade gennemgår vinen langsom malolaktisk gæring og modnes i i alt 39 måneder, inden sammenstikning og aftapning samt yderligere lagring på flaske. Hele processen er indbegrebet af "naturalisme"; vinen fremstilles uden hjælp i form af gær, enzymer, kemi, avanceret teknologisk udstyr, filtrering eller andet. Denne Brunello di Montalcino er således fremstillet efter helt old-school, low-tech metoder, og er dermed et af de mest rene udtryk man kan finde af Sangiovese Grosso." Distinto
