"Percarlo er fremstillet første gang i 1983. Druerne selekteres klase for klase fra de ældste planter fra de 8 bedste ha med Sangiovese. De høstes relativt sent og får lov at modne udover den normale modningstid og høstudbyttet er lavt. Det giver en stofrig, potent vin, der kan antage en rosenfloral karakter og som altid har en unik varietaltypicitet, der individueres af dyrkningshabitatet: Markant struktureret, med smidige, modne tanniner, stor, næsten imposant smagsfylde og en overbevisende længde i afslutningen. Anvendelsen af ny eg er på det seneste nedtonet og der anvendes nu en kombination af barriques og tonneaux. Percarlo er på mange måder det ypperste udtryk for Sangiovese dyrket i Gaiole og er en vin, der for længst har opnået kultstatus.
