The colour is a beautiful red-purple which sparkles. However, the nose is more reserved and needs patience. It blossoms on opening into a palette of darker fruits such as bilberry, blackberry and blackcurrant with wood essences such as cedar and incense. The mouthfeel is suave and well covered. This is an upright, enigmatic wine of remarkable persistence. To combine with medallions of veal with girolle mushrooms, a risotto with chorizo and parmesan, the famous bœuf bourguignon or with game. Serve between 14°C and15°C. Be patient for at least 4 years before trying. Best to drink it from 10 to 15 years old, depending on the vintage. jeanpierreguyon.com
