"La Romanée Saint-Vivant belongs to the elite of the Grands Crus of the Côte de Nuits. The plot is planted on brown limestone heavy clay and quite deep soil. Facing the rising sun, it is located at the foot of the mythical Romanée Conti.
About thirty-five years old, it produces flamboyant red wines that express all the subtleness and complexity of the Pinot noir. Harvested by hand and sorted by the vines, the grapes are 100% de-stemmed before being placed in an open oak cask. Maceration and wine-making last between 15 and 18 days. Cap-punching and recoopering are carried out daily during the alcoholic fermentation. It is aged in oak barrels, 30 to 50% of which are new, for 16 to 18 months. The malolactic fermentation is carried out to 100%. The glint of the dark ruby colour, turning to carmine with age. The depth of the bouquet is shared between small black and summer fruits, violets, spices and undergrowth as time goes by. To the palate, silky tannins, a clear and powerful body, both delicate and sensual, full and frank with very great length in the mouth. Strong meats and game will show it off to best effect: game birds or animals. Wild poultry such as lacquered duck, as well as wonderful pieces of roast veal will be delicately surrounded by those tight, yet so elegant tannins of this truly great Pinot noir.
